Abstract:

The price of shiitake is still high because of its expensive production. Several experiments were carried out to increase the yield and to decrease the production costs. Some strains were tested by selective methods to find identical ones. So we could reduce the number of strains for experimental purposes. Several nutrient solutions were tested as submerged cultures. With an efficient nutrient solution and a high yield strain we produced liquid spawn in a batch fermenter. This liquid inoculum resulted in high fruitbody yields with good quality. Several shiitake strains were tested by spawning with common grain spawn on substrate blocks with regard to their yield and average fruitbody weight. Special shiitake bags caused different utilizations of the yield potentials. Mold infection varied in a wide range dependent on the composition of the substrate.
