Abstract:

Agrocybe aegerita possesses good smell. Flavor components of Tricholoma matsutake (Murahashi, 1936) and Lentinus edodes (Morita and Kobayashi, 1966) was studied and known well. But the exact composition about Agrocybe aegerita is still not completely elucidated. The refore flavor components of Agrocybe aegerita were studied.
