Mushrooms are assuming increasing importance as a source of food because of its pleasing flavor exotic preference and awareness about nutritional and medicinal effects. Majority of Indians are vegetarians with cereal based diet but deficient in intake of good quality protein. FAO has recommended the inclusion of mushrooms in the daily diet of Indians to compensate the protein deficiency in countries where rice is the staple food. Changing food habits, increasing health consciousness and awareness of nutritional benefits have led to an increase in the demand of fresh and processed mushrooms among urban and rural consumers.
